Groundhog day, 2011. Mom Nature handed out a good ole fashioned Wisconsin blizzard. One look outside and we were in for the day. And if the past was any indication, we would not see a snow plow until mid-afternoon…or later. A perfect day for warm comfort food…like baked oatmeal, which I had never had and wanted to try. So one internet search and voila, a simple recipe from a bed and breakfast. It sounded yummy.
Like my grandmother, I can not follow a recipe exactly like it’s written, so I added a few raisins and chopped walnuts. And it was truly yummy, almost like a giant oatmeal cookie as the innkeeper had noted. And even better the next day. The recipe, if you’re interested, follows. When I make it again, I’ll cut the brown sugar to 1/4 cup. The walnuts and raisins will stay though. Enjoy.
Baked Oatmeal
Innkeeper comments: “Guests say it’s ‘like a large baked oatmeal cookie with breakfast.'”
Prep Time: 15 minutes
Cook Time: 25 minutes
Total Time: 40 minutes
Ingredients:

  • 3 cups oatmeal
  • 3/4 cup brown sugar
  • 1/2 cup butter
  • 2 eggs
  • 2 cups milk
  • 2 teaspoons baking powder
  • 1 teaspoon salt

Preparation:
Preheat oven to 375 degrees.
Mix all ingredients together and pour into 13 x 9 inch buttered pan.
Bake at 375 degrees for 25 minutes.
The innkeeper also likes to add dried fruits and nuts and pour into small ramekins for baking and serving individually.
